人类和小鼠组织中发现的三种淀粉酶是唾液淀粉酶、胰淀粉酶和卵巢肿瘤淀粉酶。人类有两种由数量非常不同的唾液淀粉酶蛋白质组成的单倍型。短单倍型包含两种胰腺蛋白，即AMY2A和AMY2B，以及一种唾液淀粉酶蛋白，即AMY1C。长单倍型由两种唾液淀粉酶蛋白，即AMY1A和AMY1B组成。在小鼠中，AMY2A有两个明显相同的拷贝，指定胰腺淀粉酶。AMY1A的单个拷贝在唾液腺和肝脏中以组织特异性方式表达。
